This is an amazing matcha. There is no more popular flavor added to green tea in the world than Jasmine so grinding up jasmine green tea into a matcha powder is a great idea. This is a very smooth and lovely tea.

No style of tea is more closely associated with the history of Japan than matcha. This finely powdered tea, made by grinding finished tealeaves into a dense powder, figures prominently in the famous Japanese tea ceremony where it is whisked and consumed in a highly stylized pattern of movements. (If ever you find yourself presented with an opportunity to take part in a Japanese tea ceremony, you must - the experience is almost otherworldly.) Jasmine Canuoan, not a typical Matcha by any means, represents an intriguing turning point in the history and culture of tea drinking.

What is so intriguing about this tea is its international provenance. As a base, the tea is made using a Jasmine green from Fujian, China. While this tea was never traditionally intended for use as Matcha, research conducted by Metropolitan Tea found that its clean floral character translated exceptionally well when ground into powdered form. (The trick when grinding a floral tea is to use a blend with a profile that doesn't become too overpowering after grinding - a process that amplifies the flavors in the tea.)

Next, the process for grinding the tea was developed by our Master Taster in our lab in Canada. After an extensive process of trial and error he perfected the technique, producing a rich cup that balances the mossy character of the tea with the sweet floral notes of the jasmine.

Finally, the blend was named after Canuoan Island in the Grenadines. While this may sound unlikely at first, it should be noted that Canuoan is purported to be the site of the first performance of the Japanese tea ceremony in the New World. Legend has it that a Japanese sailor on a French trading ship performed the ceremony in thanks after surviving a shipwreck.
